  Cinco de Mayo is approaching, and we love to have a big fiesta. After a month of seemingly never-ending rain, May usually brings lots of sunshine and beautiful weather. Cinco de Mayo is an excuse to get our family and friends together for lots of fun and food, and it’s even easier to create a great authentic Mexican menu with Old El Paso and Avocados from Mexico found at Publix! My in-laws open their pool, and we all enjoy the first opportunity of the year to go swimming while the kids play and we all pig out on tacos and our beverages of choice.
It’s easy to setup a DIY Taco Bar with tons of options to choose from. It’s fun to see what flavor combinations each guest will choose, and the kids have a blast making their own tacos. I can’t wait for our Cinco de Mayo fiesta, but that doesn’t mean we have to wait until May 5 to enjoy tacos! My family loves to setup our own little taco bar at home for a great family meal that we can all customize. Old El Paso’s dinner kits are the perfect size to feed a family. Ingredients:
Brown hamburger meat in 10″ skillet and drain grease.
Add seasoning mix from Old El Paso Hard & Soft Taco Dinner Kit and 2/3 cup water and mix.
Bring to a boil, reduce heat, and simmer 3-4 minutes.
Microwave the Old El Paso Traditional Refried beans 2-3 minutes to heat.
Time to assemble the tacos! Place a dollop of refried beans on a soft shell taco and spread to the edges covering the entire shell. Add more or less depending on how thick you want your tacos. We like to make ours thick! Place a hard shell taco in the center of the soft shell taco with beans, and wrap the soft shell taco carefully around the hard shell.
Fill with meat and your favorite toppings. Enjoy!
